Swiss Chocolatier Specializes in Bark

Läderach, which opened a shop on Fifth Avenue last month, sells two dozen types of chocolate bark by the pound.

Läderach, a family-run Swiss chocolatier now based in Ennenda, a town south of Zurich, opened its North American flagship store on Fifth Avenue just before Christmas. It has a smaller boutique in the Bloomberg Building that opened last year. Founded in 1962 by the pastry chef Rudolf Läderach and now run by two grandsons, Johannes and Elias, Läderach is a bean-to-bar company that gets its cacao from Costa Rica, Ghana and Trinidad. The centerpiece of the new store is the vast array of chocolate bark, 20 to 25 varieties in big slabs of dark, milk and white chocolate called FrischSchoggi, embedded with nuts, dried fruits, honey, caramel and even cornflakes, broken to order and sold at $9.90 for a quarter-pound. There’s a heart-shaped milk chocolate piece, with hazelnuts, for Valentine’s Day, $22.90, and bags of assorted FrischSchoggi. Truffles, bonbons and other confections are also sold. For now, the chocolates are all made in Switzerland and imported, but soon the company expects to start making some pieces in New York, and also to give classes.
