Breakfast Bibimbap Is a Satisfying, Vegetable-Filled Way to Start Your Morning

If breakfast is your favorite meal of the day, then you need to try this vegetable bibimbap. It’s savory and filling, with rice, protein, and loads of vegetables. “This is not traditional Korean bibimbap but it definitely satisfies your appetite when you’re craving bibimbap and want to make something quick in the morning,” explains Alice Choi of Hip Foodie Mom. gyeran bap , my kids have been wanting rice every day, so I came up with this.”

If you shred the vegetables in advance, this breakfast bibimbap only takes a few minutes to put together after the rice is cooked. To assemble, put some hot, cooked rice in the bottom of a bowl, then drizzle it with a bit of sesame oil. Arrange shredded vegetables around the edges of the bowl, and top with a fried egg. Alice suggests frying the egg in oil to get perfect crispy edges. You’ll want to cook it until the white of the egg is set, but try to leave the yolk runny, so the yolk coats all the other ingredients when you mix the bowl together.

After you add the egg to the bowl, garnish it with some sesame seeds, chopped green onions, and then a light drizzle of gochujang mixed with honey and sesame oil. Then, just mix it all together and enjoy the perfect breakfast, or lunch, or whatever meal you want.
