This Easy Mississippi Roast Is a Slow Cooker Win

It’s not exactly clear why it’s called a “Mississippi” roast, but the combination of chuck roast, pepperoncini peppers, ranch seasoning, and au jus gravy mix is deliciously versatile, wildly juicy, and the sort of recipe that makes people fall in love with their slow cookers.
This version swaps the packaged seasonings for a simple combination of dill, sweet paprika, mayonnaise, and apple cider vinegar — which is basically like making your own ranch dressing. “We love this Mississippi roast,” says Becky Hardin of The Cookie Rookie. “It has a unique flavor that is absolutely delicious, and it’s just so juicy. It’s one of the easiest and most requested recipes we make.”
You can make this roast the oven, but it’s great for a slow cooker because you can leave it alone for four to eight hours. It also works in an Instant Pot, where you can use the sauté function to sear the meat before adding the other ingredients. Whatever you use, the meat should be soft enough to shred with a pair of forks when it’s done.
Serve the roast for dinner with a side of mashed potatoes, rice, or egg noodles. You can also use the beef for nachos or tacos — or you can do what I do and just spoon it onto some crusty bread and enjoy it right out of the slow cooker. It’s also great the next day in leftover lunch sandwiches.
