This Colorful Noodle Bowl Is a Delicious Way to Eat More Vegetables

Looking for a vegetable-packed meal that’s not a salad? We have just the thing. This Asian noodle bowl from Alice Choi of Hip Foodie Mom is fresh, colorful, and filling without being heavy. “My Asian noodle bowl recipe is super simple and so delicious,” she explains. “I love this recipe because you can incorporate so many fresh, raw veggies.”

As Choi promises, this noodle bowl couldn’t be easier to make (and it only takes about 25 minutes). The base of the bowl consists of brown rice noodles and a light dressing made with sweet red chili sauce, brown rice vinegar, and soy sauce. The recipe calls for some sliced, sautéed tofu, but you could also substitute in some shredded chicken, or leave out the protein entirely. The bowl is topped with julienned vegetables (cucumber, carrots, bell peppers), crushed peanuts, diced green onions, and maybe some Sriracha and a squeeze of lime.

Choi says you can also enjoy these noodles in a lettuce wrap instead of eating them straight from the bowl. “Place the cooked noodles and all of the veggies in a lettuce leaf, drizzle on some sauce, fold and enjoy,” she explains. How great does that sound?
