The Easiest Homemade Birthday Cake Only Requires Two Ingredients

Think back to the coolest birthday parties you went to as a kid. You might conjure up memories of piñatas, Chuck E. Cheese, and, most important of all, ice cream cakes. A marriage of two iconic desserts, the ice cream cake says that you don’t have to make the choice between ice cream and cake: You can have it all, all at once. The world is yours, birthday child!

But the idea of actually making an ice cream cake seems much harder, or at least it did before Yummy Toddler Food put together this straightforward explainer on how to do it. “There are few things that make me feel so accomplished in the kitchen as making a homemade ice cream cake,” says Amy Palanjian, the creator of this recipe.

To make it, you basically just line cake pans with plastic wrap and scoop softened ice cream into the pan, pressing it to the shape of the pan. Then you freeze it overnight and stack and frost it as you would any other type of cake — the post has lots of ideas for tricks to dress it up, too.

Amy was inspired by her daughter’s request for an orange sherbet cake, which wasn’t easy to find. “The beauty is you can customize the flavors,” she says. And it saves lots of money without needing any fancy equipment. “You literally only need a cake pan, ice cream, and whipped cream, and it costs so much less than a purchased ice cream cake,” she says. And the result turned out to be an instant classic in their family — and likely in many more households now that the secrets are out. “We love this for summer birthdays and celebrations,” she says. “One time we even made one that looked like a watermelon on the inside!”
