The Internet-Famous Whipping Cream Cake Is a Dupe for Sara Lee (My First True Love)
published NowAs many of you probably know by now, the “Old Recipes” subreddit is full of gems. It’s given us the gift of this 1950’s “feathery fudge cake” and Armenian perok cake , for which we are eternally indebted. That subreddit was made me for cake fanatics like me.
In my recent strawberry pound cake recipe , I mentioned that my first experience with pound cake was a Sara Lee all-butter pound cake gifted to my family by a neighbor. It was the beginning of a very long relationship between me and pound cakes. These days I love making my own pound cakes at home, but I’ve never quite been able to replicate the airy, fluffy texture of the Sara Lee version.
When I saw this whipping cream cake recipe posted by Redditor Jamie , I realized that whipping cream was perhaps the secret to achieving that Sara Lee magic, so I decided to give it a go. Here’s how things went down.
How to Make the Reddit-Famous Whipping Cream Cake
This was a super-easy recipe to throw together. To start, let the butter come to room temperature before creaming it with sugar in a stand mixer (or hand mixer). Then, add in your eggs one at a time until fully incorporated. Next, you alternate between adding in the flour and the whipping cream, mixing between each addition. You don’t want to over-mix — but make sure things are fully combined. Lastly, mix in the vanilla.
You’ll notice that you don’t preheat the oven for this recipe. You’re going to pour the batter into a greased Bundt pan and place it in a cold oven . Then, set the temperature to 325ºF and let it bake for an hour and fifteen minutes, or until cooked all the way through.
My Honest Review of the Reddit-Famous Whipping Cream Cake
This cake exceeded all expectations . It gave me everything I wanted from the Sara Lee version — it was feathery and so incredibly soft. Just the smell alone as it baked gave me serious flashbacks. This recipe, however, goes far beyond those packaged cakes (delicious as they may be). As Jamie mentioned, the bottom of the cake cooks through, but it sets slightly less than the rest of the cake, producing this delicious, somewhat-gooey texture, which I absolutely love.
This was one of the heaviest cakes I’ve ever made, as I expected from some of the comments. It’s a dense cake, but in a really good way. It has body — but it manages to somehow feel airy, which is a feat. Most importantly, though, it’s super simple to make. You just need butter, eggs, sugar, flour, whipping cream, and vanilla. You can’t really ask for more than that.
If You’re Making the Reddit-Famous Whipping Cream Cake, a Few Tips
- Thoroughly cream the butter and sugar. Since there are no leavening agents in this cake, the air incorporated while creaming the butter and sugar is a large part of what makes the cake rise, so be sure to cream until the mixture has lightened in color.
- If you don’t have a Bundt pan, try a loaf pan. A commenter asked if they could use a cake pan instead, but Jamie recommended going for a loaf pan to get the same results. You’ll likely need two to use up all the batter.
- It’s OK if you have heavy whipping cream instead of regular . Jamie assured a commenter that she’s used both before, so no need to worry if you’ve only got heavy whipping cream on hand.
