Take a moment and do a quick inventory of the pans you use most in your kitchen. One of the first things you’ll notice about the pan is the unique honeycomb pattern on the cooking surface. The hexagonal design is made up of a series of stainless steel “peaks” and nonstick “valleys” that work in unison to prevent food from sticking with minimal cooking fat. HexClad’s nonstick ceramic coating is free of chemicals and PFOAs, and resists scratching and flaking, one of the reasons it can handle metal utensils. “I frequently use my fish spatula with it and the surface still looks like new,” says Riddley.

The Hybrid Pan ’s ceramic coating is capable of performing at high temperatures, whether you’re cooking over a gas, electric, or induction stove, or want to use it in the oven (up to 500°F). Inside, the pan’s three-ply construction consists of a layer of highly conductive aluminum sandwiched between two stainless steel layers, which gives it excellent temperature control, allowing you to gently cook or sear ingredients without worrying about hot spots or scorching.
