I dare you to eat just a couple of these sweet potato fries . It’s impossible. So I suggest you dive right in. Cooked in the air fryer, they’re irresistibly crispy on the outside, soft and fluffy on the inside, and kissed all over with a simple seasoning mix. Best of all, these fries are anything but greasy and they’re ready in just 15 minutes.

How to Make Crispy Air Fryer Sweet Potato Fries

  • Cut sweet potatoes into even 1/4-inch-thick pieces. This size is the sweet spot. Any larger, and they don’t quite get the same level of crispiness.
  • Coat the basket with a thin layer of oil. Don’t forget to spray the air fryer basket with nonstick cooking spray before adding the sweet potatoes. It will prevent them from sticking to the basket.
  • Don’t overcrowd the basket. Spread the sweet potatoes in an even, single layer in the air fryer basket. They can be touching, but they shouldn’t be stacked, and the more space there is between the fries, the better. If you need to, cook the fries in batches.
  • Toss partway through cooking. Instead of using tongs (which is fine, but takes a long time), I like to give the basket a good shake to toss the fries around. Just be sure to adjust any overlapping fries, so they’re in a single layer. This helps the fries pick up a nice, even brown color all over.

Do I Need to Soak Potatoes Before Air Frying?

Nope, no soaking necessary. Some recipes call for soaking the cut potatoes before cooking to remove excess starch, in an effort to make crispier fries. I’ve tested both methods, and soaking the potatoes before air frying doesn’t make a significant difference.

Serving Sweet Potato Fries

Air fryer sweet potatoes have the most irresistible crisp right after they’re made, and because of this they’re best served immediately. If you do have any leftovers, just store them in the fridge and reheat in the air fryer for a few minutes to warm them up.

Ingredients

For the fries:

  • 2

    medium sweet potatoes (8 to 10 ounces each)

  • 1 tablespoon

    canola or vegetable oil

  • 3/4 teaspoon

    kosher salt

  • 1/2 teaspoon

    garlic powder

  • 1/2 teaspoon

    paprika

  • Cooking spray

For the sauce (optional):

  • 1/2 cup

    mayonnaise

  • 2 tablespoons

    ketchup

  • 1/4 teaspoon

    chili powder

  • 1/2 teaspoon

    paprika

  • 1/8 teaspoon

    kosher salt

Instructions

Make the sweet potato fries:

  1. Heat an air fryer to 400°F. Meanwhile, peel 2 medium sweet potatoes. Cut the potatoes lengthwise into 1/4-inch-thick planks. Stack a few planks and cut lengthwise again into 1/4-inch-thick matchsticks, and repeat as needed.

  2. Transfer the fries to a large bowl. Add 1 tablespoon canola oil, 3/4 teaspoon kosher salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon paprika, and toss to combine.

  3. Lightly coat the air fryer basket with cooking spray. Working in batches if necessary, place a single layer of fries in the basket (they can be touching but should not be stacked). Air fry until starting to brown in spots, 10 minutes. Shake the basket to flip the fries and arrange in a single layer.

  4. Air fry until lightly browned and crispy, about 3 to 5 minutes more. Remove from the basket. Repeat air frying any remaining fries as needed and serve immediately with the dipping sauce.

Make the dipping sauce (optional):

  1. While the fries are air frying, place 1/2 cup mayonnaise, 2 tablespoons ketchup, 1/4 teaspoon chili powder, 1/4 teaspoon paprika, and 1/8 teaspoon kosher salt in a small bowl and stir to combine.

Storage: Leftovers can be refrigerated in an airtight container for up to 2 days. Reheat in the air fryer at 350°F until heated through, 3 to 5 minutes.
