A Week of Family-Friendly Whole30 Dinners from The Defined Dish

The mom of two is a whiz at easy weeknight recipes (often with just five ingredients) that are big on flavor, kid-approved, and Whole30-compliant.
Here, Alex shares a week’s meal plan with us, and tells us how pulls it off.
5 Simple Family-Friendly Whole30 Dinners
I like to cook Whole30 dinners throughout the week. I get asked all the time “How do you get your whole family to eat like you?” Well, it’s pretty easy with crowd-pleasing, comforting dishes like the ones I’ve included in this meal plan. Here are some of my families very favorite picks. Whether you’re following Whole30 or not, they just rock.
Monday: 5-Ingredient Salsa Verde Shredded Beef Bowls
Mondays are obviously the day you don’t want to work too hard to get dinner on the table. This 5-ingredient dinner couldn’t be easier. It’ll help you spend less time in the kitchen, and more time relaxing after a long Monday. I usually serve the kiddos their plate with steamed white rice, while I typically opt for cauliflower rice.

Tuesday: Whole30 Chicken Enchilada Soup
This soup is just heavenly. All of the big, bold flavors from enchiladas trapped in a wholesome and delicious soup that is easy to make and the whole family can enjoy. Yum!

Wednesday: Black Pepper Chicken
I love a good stir-fry on a busy weeknight. It’s typically done in one pot (or wok) and is packed with flavor. I love this Whole30 take on the classic take-out dish, Black-Pepper Chicken. It’s one of my family’s favorites!

Thursday: Whole Roasted Greek Chicken and Potatoes
Another minimal ingredient but maximum flavor dish that will please everyone at the table, this Greek-inspired whole roasted chicken and potato recipe is just fabulous. The only thing that might discourage you from making it is that you have to ‘spatchcock’ (aka butterfly) the chicken. But have no fear! With a good pair of poultry shears, it couldn’t be easier and you’ll never roast chicken the old way again. The recipe walks you through it all and the lemony and oregano goodness will have your entire family devouring this dish.

Friday: Whole30 Epic Meatballs
This is arguably the most popular recipe on my blog, and the title says it all. These meatballs are absolutely epic. There really is no way to describe why they are so epic, but just trust me and everyone else when I say that they are. Talk about a crowd pleaser!
