January is when I crave comfort food the most. The days are short and dark, and even when the sun is out, the weather is gray and freezing. As far as I’m concerned, the whole season calls for fuzzy slippers and lots of cheesy carbs. In order to find some inspiration for the days ahead, we asked the Kitchn Collective for their favorite comfort recipes. Here’s what they had to say.

1. Lobster Mac and Cheese

“Mac and cheese is always comforting, but it gets even more decadent when you add tender lump lobster and a deliciously gooey cheese sauce that bakes to perfection. When I want cozy, this is as good as it gets.” — Jocelyn Delk Adams from Grandbaby Cakes

2. Cheesy Cauliflower Rice

“This is *not* cauliflower rice with cheese — it’s actual rice plus cauliflower and cheese. The rice and cauliflower cook together in the pot, so it’s easy, and the result is super cozy (and a kid-friendly way to offer some veggies too!)” — Amy Palanjian from Yummy Toddler Food

3. Swedish Meatballs

“Once you taste this sauce, comfort is all but guaranteed. These homey meatballs are what I make when I need to relax after a long day or week.” — Becky Hardin from The Cookie Rookie

4. Jajangmyeon Korean Noodles with Black Bean Sauce

“My most cozy, comforting recipe ever has to be Jajangmyeon. It’s a Korean/Chinese noodle dish with a black bean sauce and is so delicious! You can enjoy this meatless, but I like to add pork with my potatoes, onions, and zucchini.” — Alice Choi from Hip Foodie Mom
