This Lower-Sugar Banana Bread Will Quickly Become a Household Favorite
published about 3 hours agoLike many people, I made a lot of banana bread in 2020. It’s a useful thing to have around — especially when kids are learning remotely and everyone is in the house all day. There are a ton of banana bread recipes out there that are delicious in different ways, but right now I’m very interested in this one from Amy Palanjian of Yummy Toddler Food , because it has less sugar than other recipes I’ve seen. It’s a bit more healthful and tastes less sweet, but it’s still an easy, kid-friendly snack for any time of day.
“With a little less sweetness, but the classic flavor and texture you expect, this bread is a morning favorite in our house,” says Amy.
This banana bread has a combination of all-purpose and whole-wheat flour, and half the sugar of a standard recipe. It still gets plenty of sweetness from mashed bananas, though, and a touch of cinnamon and vanilla for flavor. The lower amount of sugar makes it a bit less moist than most banana bread recipes, but that can easily be countered by warming it up before eating it.
The recipe is easy enough for kids to help with — bigger kids can pour and measure, and very small kids tend to like mashing the bananas. Add nuts or chocolate chips if you like them. It’s especially good when toasted and topped with butter, jam, or cream cheese. If you wind up with extra, you can keep it in the refrigerator for up to five days, or you can slice it and freeze for up to six months.
