This year, more than ever, spring felt so long-awaited. And we welcomed it with open arms this month! With the weather finally getting nicer, plus a glimmer of hope in the air (thanks to the vaccine), we celebrated April by feeding ourselves well.
We published lots of great new recipes this past month, but you definitely had your favorites. Dinners like spinach artichoke orzotto , Instant Pot chicken tacos , and a veggie-loaded stuffed pepper skillet were a hit, as were many of our new potato recipes (because when are potatoes ever a bad side dish move?). The top recipe, though, might just surprise you: It’s a total celebration of the season and the great produce that comes with it.
This deconstructed stuffed pepper skillet is ready in half the time. It's packed with beans, rice, fire-roasted tomatoes, and plenty of spices, then topped off with melty cheese.
This quick and easy sheet pan dinner features potato gnocchi, cherry tomatoes, and fresh mozzarella, all roasted together in the oven before being topped with fresh basil.
These potatoes will steal the show no matter what they’re served with. In fact, once you learn how to make them, you might just find yourself planning dinners around them to ensure they’re on your plate.
Roasted asparagus is a quick and easy side dish for any night of the week. Add a little Parmesan and garlic to the mix and you have some crave-worthy veggies that take practically no time to whip up.
