A pre-packed lunch is like a present you make for your future self. Meal prep takes a bit of work upfront, but it’s such a pick-me-up in the middle of the day to see a delicious wrap or salad in my lunch bag. (Thanks, Past Self!)

Weekday lunches are quickly becoming my favorite summer meal. I’m all about the fresh greens and light vegetables, and not having to eat anything hot in the middle of the day. I’ve been experimenting with new recipes since May, and I still don’t feel like I’ve scratched the surface of delicious lunch salads. There are just so many options!
