Ingredients

  • 1 cup

    California walnuts (4 ounces), plus more for serving

  • 1 1/2 ounces

    Pecorino Romano cheese, finely grated (1/2 cup store-bought or 1 1/3 cups grated on a Microplane)

  • 4 ounces

    cream cheese

  • 1/3 cup

    water

  • 3/4 teaspoon

    freshly ground black pepper, plus more for serving

Instructions

  1. Arrange a rack in the middle of the oven and heat the oven to 350°F.

  2. Arrange 1 cup California walnuts in a single layer on a rimmed baking sheet. Bake for 5 minutes. Stir and continue to bake, checking and stirring every 2 to 3 minutes, until fragrant and toasted, 3 to 7 minutes more. Transfer the toasted nuts to a food processor fitted with the blade attachment.

  3. Finely grate 1 1/2 ounces Pecorino Romano cheese and add to the food processor. Add 4 ounces cream cheese, 1/3 cup water, and 3/4 teaspoon black pepper. Process to desired consistency, 30 seconds to 1 minute. Crush more walnuts and sprinkle over the dip with more black pepper before serving.
