Citrus-Chile Marinade

Place 1 coarsely chopped small yellow onion , 4 garlic cloves , 1 canned chipotle en adobo plus 1 tablespoon of the sauce , 1/2 cup orange juice , and 1/4 cup lime juice in a blender. Season with kosher salt and black pepper and blend until smooth. Use as a marinade for beef, pork, chicken, or tofu. Can also be used on fish right before cooking.

Spicy Lemongrass Marinade

Coarsely chop 1 (6-inch) piece lemongrass and place in a blender. Add 1/2 coarsely chopped small shallot , 1/2 cup vegetable oil , 2 tablespoons chile-garlic sauce , 1 (2-inch) piece unpeeled ginger , 2 tablespoons lime juice , and 1 tablespoon packed light brown sugar . Season with kosher salt and black pepper and blend until smooth. Use as a marinade for beef, pork, or chicken, or use it in stir-fries.

Easiest-Ever BBQ Sauce

Place 1 coarsely chopped small yellow onion , 2 garlic cloves , 1/2 cup ketchup , 1/4 cup red wine vinegar , 2 tablespoons Worcestershire sauce , and 2 tablespoons packed light brown sugar in a blender.
