A Bagel and Lox-Inspired Salmon Dinner
This five-ingredient skillet pulls together a few ingredients that usually mingle together in a bagel and lox sandwich : everything bagel seasoning, red onion, capers, and, of course, salmon. To put it firmly in the dinner camp and make it a complete meal, broccoli is thrown into the mix. Just remember that because everything bagel seasoning and capers are both salty, you don’t need much additional salt to make this a well-seasoned meal.

Ingredients
- 1 pound
broccoli
- 1
medium red onion
- 4
(6-ounce) skin-on salmon fillets
- 1 teaspoon
kosher salt, divided
- 1/2 teaspoon
freshly ground black pepper, divided
- 4 tablespoons
olive oil, divided
- 2 tablespoons
everything bagel seasoning
- 2 tablespoons
capers
Instructions

Cut 1 pound broccoli into bite-sized florets. Halve and thinly slice 1 medium red onion. Pat 4 salmon fillets dry with paper towels, then season on both sides with 1/2 teaspoon of the kosher salt and 1/4 teaspoon of the black pepper.

Heat 2 tablespoons of the olive oil in a large nonstick skillet with a lid over medium-high heat until shimmering. Add the salmon skin-side up and sear until golden-brown on the bottom, about 4 minutes.

Transfer the salmon skin-side down to a plate (it will not be cooked through). Add the remaining 2 tablespoons olive oil to the pan. Add the broccoli, red onion, remaining 1/2 teaspoon kosher salt, and remaining 1/4 teaspoon black pepper. Sauté until the broccoli is crisp-tender, 5 to 6 minutes. Meanwhile, sprinkle 2 tablespoons everything bagel seasoning on top of the salmon, pressing it gently to adhere.

Reduce the heat to medium. Stir 2 tablespoons capers into the pan. Return the salmon skin-side down to the pan, nestling it into the broccoli. Cover and cook the salmon to desired doneness, 2 to 5 minutes depending on the thickness of the fillets. An instant-read thermometer inserted into the middle of the thickest fillet should register 120°F to 130°F for medium-rare or 135°F to 145°F if you prefer it more well-done.
