These Gooey Butter Cookies Will Melt in Your Mouth and Capture Your Heart

As I said, the recipe is extremely easy to make, but they can be a tad finicky. Whip cream cheese, butter, and granulated sugar until fluffy, then add the dry ingredients and mix gently. It’s important to chill the dough after it’s mixed. If you don’t, the cookies won’t keep their shape in the oven, and instead of plump, chewy butter balls, you’ll have one big flat cookie the shape of your cookie sheet. Even chilled, these will spread a lot, so make sure to give the dough balls plenty of room on your baking sheet.
It’s also a good idea to keep an eye on these cookies when you bake them. They’re supposed to be gooey, so they should feel a little under-done when you take them out of the oven. When the sides are firm and the tops no longer look wet, they’re ready to go.
These cookies are best eaten within a few days, but if you store them in the refrigerator, they should still be good for about five or six days after baking. You can also freeze the unbaked dough for about three months.
