Wow! So much flavor! This will be a keeper for sure. Only changes I made were doubled the garlic and lemon, then stuffed 1/2 bunch of fresh thyme inside before cooking. Can't wait to make this again!

Hands down, the best roast chicken we've ever made - and one of the easiest. We used a little of the juices from the pan, but the chicken was so juicy we didnt even need it. We used olive oil (not butter) which worked out perfectly.

OVER...THE .... TOP... GOODNESS. OMGOSH... I did cook a bit longer but used my thermometer to decide that. I added fresh thyme and threw in lemon/lime/celery bits in the cavity. When finished cooking and resting I squeezed the cooked lemon over the chicken and threw the cooked garlic in my mashed potatoes. I finished it off with the 'gravy' from the bottom....I AM IN HEAVEN. I dare anyone to top this recipe...simple and wholesome. A M A Z I N G!!!

This was the first recipe I made after 10 years of being a vegetarian. It's easy and absolutely delicious! I've made it several times since May. This last time I added an additional lemon (half in the chicken) and some thyme springs per another review, and it was perfect. *chef's kiss*

I have made every roast chicken recipe known to man and this one is, by far, the best! My adult son requested it for Christmas dinner so I am making it again today! A true gourmet delight and so simple! Thank you.

So Easy and So Good! Will definitely mark again. Took longer to cook than 45 minutes. Was at 425 for an hour. The drippings you pour over the chicken at the very end, yummy!

This was tonight's dinner. Through potatoes in the oven to bake with the chicken. Very easy for an excellent meal. I doubled the garlic, one head in the bird and one in the pot. The sauce? Its is OMG good! This is going into my cooking for company recipes.

One of my favorite dishes to make in the winter is a roast chicken. Not only it is delicious but you get to enjoy the fruits of your labor all week. From chicken salad the next day to a slow roasted broth, I cannot begin to express my utmost love for preparing a bird. This was my first time using this recipe and man oh man, I am obsessed. I doubled the amount of lemon in the pan, added fresh thyme and also stuffed the bird with an additional lemon and some leeks. Perfection. Thank you BA!

Thank you, God and BA for this foolproof manual. I once tried to make an “engagement chicken” from a magazine article and it all went so poorly I’d sworn off roasting whole birds forever. This was years ago. The fellow married me anyway and requested roast chicken for quarantine thanksgiving this year. I followed this recipe, step by step, and he watched the linked video to carve it, and two hapless millennials managed to pull off something resembling a thanksgiving for their young child, who really only wanted the mini marshmallows anyway. 10/10!!
